Thai Taste Red Curry Paste Sachet

Recipe SuggestionBeef & Baby Sweetcorn Thai Red CurryServes 2-3You will need:1 tbsp oil300g beef or tofu, cut into stripsAnd/Or chopped seasonal vegetables1 sachet red curry paste200ml Thai Taste Coconut Milk1tsp Thai Taste Fish Sauce6-8 baby sweetcorn, halved1-2tsp or 4-5 leaves of Thai Basil, or fresh basilCooking instructions:1. Heat the oil in a deep frying pan.2. Add red curry paste and 1tbsp of coconut milk and mix until the aromas are released (3 mins).3. Add the beef/tofu, stirring to coat with the paste (about 3 mins).4. Stir in the rest of the coconut milk, optional vegetables, fish sauce and palm sugar and simmer until the ingredients are cooked (about 5 mins). The sauce should not be too thick.5. Add the baby corn and basil and continue to simmer for a further 5 mins.Serve with Sticky Rice or Rice Noodles. Garnish with fresh coriander and a squeeze of lime.
