The minerality and freshness of the Grillo compliments the intensity and body of the Viognier. Bouquet of white fruits, that develops into notes of apricots & herbs. The palate has a wonderful minerality, well balanced with a softness on the finish.

History
Santa Tresa was established in 1697 and is located on a plain, with the Dirillo river to the north, Iblei mountains to the east and open sea to the south and west. Wine has shaped the lives of the people of Vittoria, who have lived and breathed the culture for over 3,000 years. The symbol is an important part of the brand represents "Sun and Gold"and dates back to medieval times. Sun and Gold are very much associated with Sicily - a land blessed by "golden light".

Vinification Details
Both varieties are vinified in a similar way. We chill the grapes overnight in a refrigerated room to lower the temperature to 6-8°C, thereby protecting the aromatic characteristics of the grapes. The following day, grapes are gently destemmed and softly pressed. The must remains in a tank for one night at a temperature of around 10°C, allowing the natural sedimentation of all the solid particles to occur. Wine is moved into a stainless steel tank, where it ferments at 17-19°C for 10-12 days.
