Paella rice is the foundation of the classic paella recipe created in Valencia. Paella rice is a slow growing short grain variety that has the amazing property of absorbing 3 times its own volume when cooked without falling apart. The flavour of the paella is primarily the rice absorbing the flavours from the stock but cooking paella is not like making risotto. Once you add the hot stock you don't stir it - what you are trying to achieve is the "socarrat"; that crisp crust at the bottom of the pan.
