Preparation and Safety

Low fat white sauce
300ml skimmed milk
2 tbsp Sainsbury's Sauce Flour
Salt and freshly milled black pepper, to taste
Place the milk and sauce flour into a pan and over a medium heat bring everything up to boiling point, stirring continuously. Season and simmer a further 3 minutes.

Cheese sauce
Follow the recipe for low fat white sauce and add a pinch of cayenne pepper, freshly grated nutmeg and 100g grated mature cheddar.

Sunday gravy
Follow the recipe for low fat white sauce replacing milk with stock and add 1 tablespoon of Madeira (beef) or redcurrant jelly (lamb).

Brandy sauce
Follow the recipe for low fat white sauce, omitting seasoning. Add 4 tablespoons brandy and 1 teaspoon of brown sugar.

For thickening
Sprinkle and stir into hot (not boiling) soups, stews and casseroles. Simmer for a further 3 minutes after addition to maximise this effect.
