325g paella rice

200g raw prawns
100g frozen peas

1 large onion, finely diced
2 tbsps olive oil
100g chorizo, diced
325g paella rice
1 red pepper, finely diced
200g raw prawns, defrosted if frozen
100g frozen peas
Fresh parsley, finely chopped for garnish
1 litre of cold water
Before cooking: Heat 2 tbsp of oil in a frying pan.
During cooking: Fry the diced onion and chorizo over a medium heat for 4-5 minutes, or until lightly browned. Add the paella rice and cook for a further minute, stirring. Mix sachet contents with 1litre of cold water, stir into pan along with the red pepper and bring to the boil (approximately 7 minutes). Reduce to a low heat and simmer, stirring regularly for 15 minutes, or until water is mostly absorbed and rice is cooked. Add prawns and peas, cook for a further 5 minutes, or until prawns are cooked through.
