INGREDIENTS:
Cake Mix (81%) (Fortified British Wheat Flour (Wheat Flour, Calcium Carbonate, Iron, Niacin, Thiamin), Sugar, Raising Agents: (Potassium Bicarbonate, Potassium Phosphate, Calcium Phosphate), Lemon Flavourings. Icing Mix (19%) (Icing Sugar, Lemon Flavourings, Citric Acid).
Preparation Guidelines
Stage 1
Pre-heat the oven to 180⁰C/Fan 160⁰C/Gas Mark 4. Grease and line a 900g (2lb) loaf tin.
Empty the cake mix into a mixing bowl and add 2 medium eggs, 80ml vegetable oil and 60ml of water.
Using an electric whisk, whisk on a medium speed for 2 minutes.
Pour the mixture into the tin and bake in the centre of the oven for approximately 40 minutes until risen and cooked through.
Remove from the oven and allow to cool completely before transferring on to a cooling rack.
Stage 2
Empty the drizzle icing sachet into a bowl, add 15ml of boiling water and mix to a smooth icing.
Prick the top of the cake with a fork and drizzle the icing all over.
