INGREDIENTS:Cumin Seeds, Roasted Coriander Seed, Turmeric, Cassia, Cardamom, Fenugreek, Nutmeg, Black Pepper, Chilli Powder.
Chicken Korma Curry - Serves 4
To cook on the hob, low or moderate heat - 45 minutes
Before Cooking: Peel and slice 2 medium-sized onions. Crush 2 garlic cloves. Chop 1 tsp of ginger. Dice 4 chicken breasts (2cm)
During cooking: Heat 3 tbsp of oil and 1 tbsp of butter in a large non-stick pan. Add the onions and a pinch of salt and fry over a moderate heat for 10 minutes, until soft and golden.
Add 2 cloves of chopped garlic and 1 tsp of chopped ginger. Cook for 3-5 minutes until golden brown.
Add 2 tbsp of the korma curry powder and the chicken. Brown for 5 minutes, stirring occasionally.
Add 400ml coconut milk, 80ml double cream, 4 tbsp ground almonds and 2 ½ tbsp honey. Cook on a medium heat for 25 minutes until sauce is thickened and the chicken is cooked through. For a more intense flavour increase curry powder to taste.
After Cooking: Remove from heat. Season to taste, garnish with fresh coriander and serve piping hot with basmati rice.
