1: Get sizzling •Pre-heat the oven to 200°C/400°F/Gas Mark 6. •Cut 500g chicken breast into small chunks. •Heat 15ml oil in a pan over a medium high heat and fry the chicken for 8 minutes or until cooked through. Keep turning the chicken whilst cooking. •In a bowl, combine the enchilada seasoning mix with 1 sachet of enchilada sauce and 150ml hot water. Add the cooked chicken, 75g grated Cheddar cheese and mix well. 2: Wrap and roll •Take the tortillas and spoon the filling down the middle of each one. •Roll them up and place them seam side down into a lightly greased baking dish. 3: Ready to cook •Top with the remaining sachet of enchilada sauce. •Sprinkle with remaining 75g grated Cheddar cheese. •Cook in the centre of the pre-heated oven for 20-25 minutes, or until the cheese is browned and bubbling. Why not serve some Mexican street slaw with your Enchiladas? To make the slaw you will require: Ingredients •1/2 small red cabbage •½ small white cabbage •50g radishes, finely sliced •Handful of fresh coriander •3 carrots •2 red onions •3 limes, zest and juice •1-2 jalapenos, sliced •4tbsp olive oil Method 1.Shred the red and white cabbage and place in a bowl 2.Thinly slice the radishes using mandolin, if you don’t have a mandolin, thinly slice using a knife. 3.Half the onion, slice and slice the jalapenos; mix through the salad. If you prefer your salad to be spicier, add more jalapenos. 4.Use a food peeler and create ribbons of carrot, if they are too long, cut them in half and mix through. 5.Finally, dress the salad with olive oil, lime zest, juice, salt and pepper. Taste and adjust if necessary. Serve alongside your favourite Mexican dish or great for picnics.
