Pav Bhaji Recipes
Serves: 4
Preparation Time: 10 minutes
Cooking Time: 30 minutes
What You Need:
2 tbsp oil
1/2 onion, diced
1/2 green pepper, diced
1/2 tsp garlic puree
1/4 tsp ginger puree
3 tomatoes, diced
25g Rajah Pav Bhaji Masala spice blend
1 tsp salt
375g mixed vegetables (suggest 100g frozen peas (defrosted), 100g cooked, diced potato, 100g cooked cauliflower florets, 75g cooked diced carrot)
50g butter
bread rolls
Optional Garnish
2 tbsp coriander leaves, freshly chopped, lime wedges and chopped onion
Method:
1 Heat oil in a large saucepan.
2 Add onion and fry for 15 minutes until soft and golden.
3 Add green pepper, garlic and ginger and stir fry for 2 minutes.
4 Add the tomatoes, reduce heat and cook on a low heat until the oil separates.
5 Add Rajah Pav Bhaji Masala spice blend and salt and cook for 2 minutes.
6 Add the vegetables, heat through and mash thoroughly using a masher.
7 Add butter and garnish with chopped coriander leaves. Serve with buttered bread roll (pav), lime wedges and chopped onion.
