Vinification Details
Prophecy Sauvignon Blanc's grapes are destemmed but not crushed and lightly membraned pressed. The wine was fermented in upright tanks between 13 C - 18 C for between 14 - 20 days. The wine was racked off gross fermentation and left on light lees.
