Quick & Easy

Recipe for 2 Servings
1. For Katsu Curry with Chicken or Cod (or other white fish), take the whole fillet, but reduce the thickness by slicing in half lengthways if more than 1.5cm to ensure even cooking. For Tofu, slice into 2cm thick domino-size pieces.
2. Dip the chicken/tofu/fish fillet into whisked egg before pressing all sides onto a plate of panko breadcrumbs.
3. In a frying pan, heat up 4 tbsp of cooking oil and add the breaded piece. Fry on each side until cooked through and golden on both sides (about 4-5 minutes). Slice into strips.
4. Add 60ml of water into a saucepan, then add the curry sauce. Leave it to bubble until it thickens (about 5 minutes). Add more water as desired. Serve with rice & veg.
