Chicken Quesadillas with Fresh Salsa
Flavour Kit
350g Chicken breast, diced
4 Medium tomatoes, diced into approx 2cm pieces
75g Cheddar cheese, grated
1 Large red onion, finely chopped
4 Tortillas
Simple Swaps
Make a fajita or taco by using the cooked chipotle chicken and salsa as a filling
Make it vegan by swapping the chicken with black beans and using vegan cheese alternative
Prep time 15 mins
Cook time 20 mins
Preheat oven to 160C/Fan 140C
1 Heat 1 tbsp oil in a large frying pan over a medium heat. Fry half the red onion for 3-4 minutes to soften.
2 Add the diced chicken and cook for 5 minutes. Add the chipotle paste and half the tomatoes, mix well and cook for 5 minutes checking the chicken is cooked.
3 Meanwhile make the salsa. Put the other half of the red onion into a bowl with the rest of the chopped tomatoes, mix in the salsa seasoning and keep aside.
4 Heat 1 tbsp oil in a clean frying pan over a medium heat, place a tortilla in the pan. Add a layer of grated cheese, then layer on half the chicken and some salsa. Top with another tortilla.
5 Place a plate over the frying pan and use to flip over. Cook for 2 more minutes - place in the oven to keep warm and repeat with the other tortillas. Cut in quarters and serve.
