History
Based in Treviso in the heart of Prosecco country, La Gioiosa is one of Italy's leading Prosecco producers. Owned by the Moretti Polegato family, la Gioiosa represents the tradition of winemaking which has been passed through generations of the family. Furthermore the company is at the forefront of innovation - the winemaker freezes the Prosecco must prior to fermentation to ensure maximum freshness upon bottling.

Based in the Veneto region in north east Italy, Treviso is known as the centre of Prosecco production.

Vinification Details
Grapes are put into the pneumatic press for soft pressing and the resulting must, is racked and then put into controlled temperature tanks until it is used for the production of the sparkling wine. The must with added yeast cultures is then fermented at controlled temperature of 15-16°C to enhance all the harvest fragrances. Upon reaching the required alcohol and sugar content fermentation is stopped by refrigeration. After a short settling period the sparkling wine is ready for bottling.
