Preparation and Usage
Ingredients: (Serves 4)
125g Great Scot Red Split Lentils
1tbsp Olive Oil
1tsp Ground Paprika
1tsp Ground Turmeric
1/2 tsp Cayenne Pepper
1 Onion, diced
3 Carrots, sliced
3 Potatoes, diced
1 Red Pepper, diced
1x400g Can Chopped Tomatoes
750ml Vegetable Stock
1tsp Fresh Basil, chopped
1 Bay Leaf
Salt & Black Pepper
Methods...
1. Soak the lentils in cold water for 1 hour.
2. Heat the oil in a saucepan over a low heat & gently fry the spices for 1 minute.
3. Add the pre-soaked lentils, onion, carrots, potatoes & red pepper, cook for 5 minutes.
4. Add the tomatoes, vegetable stock, basil & bay leaf to the pan with the lentils & simmer gently for 40 minutes.
5. Remove the bay leaf, season to taste & blend in a food processor to an even consistency.
6. Return to the pan to heat through & serve with a swirl of natural yogurt.Instructions
2. Place 100g of lentils into a large saucepan with 500ml of water.
3. Boil for 10 minutes, then simmer for 15 minutes, until the lentils have softened but are slightly firm to the bite.
4. Drain, rinse and use.Recipes

Ingredients:
250g Great Scot Red Lentils
800ml water, boiling
1 tbsp vegetable oil
6 rashers smoked back bacon, diced
2 tbsp sundried tomato paste
250g cherry tomatoes, halved
Small bunch fresh parsley, chopped
Method:
1. Bring the lentils and boiling water back to the boil in a large saucepan and then simmer for 15 minutes. Remove from the heat and drain thoroughly.
2. Meanwhile, heat the oil in a pan and fry the bacon until browned.
3. Add the sundried tomato paste and tomatoes to the pan with the bacon and cook for 3-4 minutes until the tomatoes have softened.
4. Stir the cooked lentils and chopped parsley into the pan and cook for 1 minute to warm through. Serve with roasted Mediterranean vegetables.Package Type
