The legend goes that some errant members of Fairview ¿s long-established goatherd once escaped from their paddock into the Fairview vineyards after Charles Back ¿s young son Jason accidentally left the gate open. The little group happily roamed among the vineyards, showing rare discernment by selecting some of the ripest berries from the vines. Those berries have been used to make this white blend, a light bright green, medium bodied wine with aromas of apricots and pear and a zesty acidity. |

This wine is vibrant lemon colour in the glass, with attractive aromas of white blossom, peach and apricot notes. The palate is medium bodied with stone fruits and citrus flavours, and a fresh, lively acidity. |
The Fairview estate is situated approximately 50 kilometres from Cape Town, on the lower slopes of Mt. Paarl, and was planted with vines as early as 1699. The property was bought by Charles Back's grandfather in 1937 and was subsequently run by his father, Cyril, before Charles took charge. His era has seen Fairview emerge to become one of the country's most exciting properties, with all its production now certified as Fair Trade. |
The fruit for this wine was mainly sourced from vineyards on the slopes of Paarl Mountain where Charles Back has been growing Viognier, Roussanne and Grenache Blanc for several years. Soils here are decomposed granite. The majority of the Grenache Blanc grapes was sourced from the vineyards in Darling. All grapes are 100% Fairtrade. |

The grapes were picked between 22 and 23.5 ° Brix. The fruit was then destalked and crushed and then gently pressed. Only free-run juice was used and the vineyard parcels were kept separate. The juice was cold fermented in stainless-steel tanks and the individual components were left on their lees prior to blending and bottling. |
