Making handcrafted pasta for Garofalo does not mean having out dated machines or producing product by hand, but knowledge, modern technology and a sound philosophy of production. Garofalo carefully control every single aspect of the process until the final result is what they consider the absolute best pasta.
Gemelli are spiral pasta. It appears to look like two tubes twisted around each other, but is in fact one single s-shaped strand twisted to form a spiral, like interlaced string. Gemelli looks so much like two tubes twisted together, that its name is derived from the Italian word for "twins".
