Vinification Details
Following de-stalking and crushing, the grapes were transferred to temperature controlled stainless steel fermentation tanks, where fermentation was carried out at between 25 and 28°C. Maceration lasted for around 30 days, the exact duration being decided as a function of regular tasting and analysis. Once the young wine was racked from it's lees, malolactic fermentation was carried out
