Cooking Instructions
Makes 100 Khatta Dhoklas of approximately 12g each:
1. Mix in large bowl 150ml (5 fl.oz) of fresh or sour yoghurt (dahi), 700ml (25 fl.oz ) of water and 50ml (1 1/2 fl.oz) of sunflower oil.
Tip! For a spicier taste add 1 teaspoon of ginger and green chilli paste.
2. Add Fudco Khatta Dhokla instant mix gradually. Whisk for 1 minute until the batter is smooth and consistent. Keep the batter aside for 15 minutes.
3. Grease 2 baking trays with oil. Pour equal quantities of batter into each tray, allowing the batter to be 2" thick. Sprinkle black pepper or red chilli powder to garnish.
4. Steam water on high flame for 15 minutes. If pressure cooker is used do not apply weight or whistle. Allow to cool for 5 minutes. Cut Dhokla cake into 5cm cubes or wedges. Tip! Heat 30ml (1 fl.oz) oil. Add 1 teaspoon of mustard seeds, 2 pinches of asafoetida powder and curry leaves. Garnish evenly over cake. Sprinkle 2 tablespoons of chopped coriander leaves. Serve hot with green chutney.
