Every Grand Vintage is unique and original, the Moet & Chandon Chef de Cave's personal, free interpretation of the singular qualities of that year's grapes. The initial nuances of the bouquet are harvest notes and vanilla which gradually expand into darker, toastier notes (grilled sesame seeds, roasted almonds, mocha). Concurrently, hints of juicy, fleshy fruits (peaches, apricots) and a floral scent of roses and peonies round out the delicate ensemble. On the palate, the controlled power of the Pinot Noir, with notes of honey and mid spices, is underscored by a nuance of pink grapefruit.Blend: Pinot Noir 50%, Chardonnay 36%, Meunier 14%The date mentioned hereafter is the disgorging date of this bottle.Dosage: 5 g/l

Storage

Sparkling wines  and Champagne should always be stored in a cool and dry place away from light and heat sources. The ideal temperature for storage is 13-15 degrees C.   

Warning: Sparkling wines contain high natural pressure. Do not allow bottles to get warm. Chill bottle before opening and avoid shaking. Point bottle away from others and yourself when removing wire, hood and cork. Hold the cork firmly and twist out slowly by hand. Never in any circumstances use a corkscrew to open.

To dare to declare the Vintage only when the harvest meets its ideal. Such is the commitment of Dom Perignon. All his innovations became the fundamental rules of the method champenoise.

Regional Information
Only ever a Vintage, Dom Perignon is an act of creation, constantly renewed after each harvest. Dom Perignon Vintage 2012 is made from the finest selection of Chardonnay and Pinot Noir grapes: only a handful of the finest Grands Crus vineyards have the soil and exposure that enables the fruit to attain its fullest expression. A minimum of seven years' ageing on the lees in the Dom Perignon cellars enables the Vintage to reach the desired complexity

Vinification Details
A harsh winter was followed by a mild and rainy spring. Flowering turned out to be difficult, and the threat of mildew was high. Storms in July raised fears for the grapes' health. August, however, was perfect. The hot and dry weather was uninterrupted right up to the harvest. The harvest began on September 12th in idyllic conditions.
