History: Nestled amongst the patchwork of orchards, dairies and market gardens in South Australia's cool climate Adelaide Hills, Bird in Hand was planted in 1997 by the Nugent family. The site was once a dairy farm, however the Bird in Hand Winery is named after the old Bird in Hand goldmine that prospered in the area through the 1800s. Senior Winemaker Dylan Lee works alongside internationally renowned winemaker Kym Milne MW to craft some of the Adelaide Hills most iconic and loved wines.
Regional information: Bird in Hand is situated in the cool Adelaide Hills wine region of south Austalia. Its 80 fertile acres enjoy the ideal growing conditions for cool-climate wines. The seaside influence of the Gulf of St. Vincent, the cloud-trapping rise of the Mount Lofty Ranges and plenty of Australian sun all combine to create a special diurnal temperature shift that their grapes love.
Vinification: The 2020 growing season started on the back of average winter rainfall in the Adelaide Hills. Spring was characterised by dryer than average conditions, with rainfall down 35%. There were also several frosty mornings from September through to November. Late Spring to early Summer was hot and dry. Although bunch numbers were generally good, the conditions meant that bunch weights were well down and therefore yields across the board were low. January and early February were characterised by mild conditions and some decent rain was highly beneficial for freshening vine canopies and filling out bunches. The remainder of the ripening period through Autumn was favourable, with night-time temperatures remaining cool, daytime temperatures mild and no major heat spikes or rain events. This enabled a long, slow and even ripening, helped grapes retain good natural acidity and ensured they could be picked at the optimal time for flavour and style
