In contrast to wheat couscous, this variety is made solely from Moroccan barley semolina that has a subtle nutty taste. The distinct texture of Barley Couscous is produced by sprinkling the semolina with water to form small pellets. The pellets are then sieved repeatedly until all the semolina has formed into little granules of couscous. Use as a base for a wide variety of hearty Moroccan style dishes.

Preparation and Usage
Spice up with a spoonful of Belazu Rose Harissa and load with your favourite roasted vegetables. Add some thinly sliced preserved lemons and parsley to serve with a Moroccan tagine.

Instructions
Hob - From Ambient. Simply place 100g of Barley Couscous into a bowl, pour over 200ml of boiling water or stock, stir, cover, leave for about 5 minutes, drizzle with olive oil, fluff up and serve.

Add the boiling water to the couscous2. Leave for 5 minutes until water is absorbed3. Peel the preserved lemons and cut into 3 mm cubes4. Stir in the Verbena Harissa and chopped lemons5. Add a splash of Extra Virgin Olive Oil and salt to taste
