The bulb is usually the most sought-after part of the vegetable as it holds most of that liquorice root flavour and can be enjoyed both cooked and raw. One can easily roast the bulb, or chop into thicker segments and bake into gratins for a more herbaceous taste than onion. We enjoy it best fresh, just shaved paper thin on a mandolin, thrown in with some peeled orange segments and a handful of salad leaves.
