Empty the cake mix sachet into a large bowl and add 1 medium egg and 4 tbsp (60ml) milk and mix with an electric whisk for 1-2 minutes until combined.\u003c\/li\u003e\n\u003cli\u003e4. Divide the mixture between the 6 greased wells and bake in the centre of the oven for 14-16 minutes until risen.\u003c\/li\u003e\n\u003cli\u003e5. Cool in the tins for 5 minutes, run a palette knife or blunt knife around the rim of the cakes to loosen.\u003c\/li\u003e\n\u003cli\u003e6. Place a compote half with an icing half together to make 6 mini Victoria sandwich sponges.
