Microwave (150 W): Pour the required amount of mussels laid flat in a suitable dish, turning halfway through. 8 to 10 mins for 250 g, 12 to 15 mins for 500 g. Fridge: 4 hours. Lay the mussels flat on a plate and cover. For use hot: In a pan: Add the mussels to the simmering water (1\/2 litre for 500 g). Immediately turn off the heat source and leave for 2 to 3 mins for 250 g or 3 to 4 mins for 500 g, then drain immediately. Steamer: Place the mussels flat in the steamer basket above a simmering court bouillon.
