Rub each chop with 5ml of oil and season with salt and pepper. Pan fry over high heat for 2 mins each side. Turn chops upwards onto rind and fry for further 1 min. Remove from pan and place on baking tray in the middle shelf of preheated oven. Cook for 14 mins. Appliances vary, these are guidelines only.
