Leave lamb at room temperature for 30 mins before cooking. Place lamb leg into roasting tray, removing mint butter and placing into the bottom of the tray season lamb leg with salt and pepper. Place into the centre of the oven. Baste every 15 mins with the melted mint butter and cooking juices. Remove from oven and cover with foil. Allow to rest for 15 mins before serving.
