The average age of the vineyards is 10 years with the fruit picked using a combination of hand and machine harvest.\u003c\/p\u003e\u003cp\u003eVinification: The fruit was destemmed and gently pressed prior to a 48 hour cold soak at 12°C to extract soft tannins and primary, bright flavours.
