Season, rubbing the fat with flour and dry mustard. Seal for 3-4 minutes in a hot pan. Roast for 20 minutes per 500g, plus a further 20 minutes. Baste well to keep it succulent and ensure the surface is thoroughly cooked. Cover and rest for 10-15 minutes before carving. Brisket \u0026amp; Silverside: Heat oil in a pan, season and seal joint for 3-4 minutes. Add beef stock to cover, plus seasonal vegetables, herbs or spices, Worcestershire sauce or red wine if you like. Bring to boil, skim off fat, cover with foil and place in the oven at 170°C (fan 150°C)\/Gas mk 3, for 3 hours. Remove from liquid and rest for 10-15 minutes before serving.
