A brilliant deep purple colour when cooked, black rice provides a beautiful contrast in meals and is an impressive addition to any dish. It has a delicious rich nutty taste and a chewy texture that suits a wide range of cuisines and dishes from a delicate pilaf to a summer salad or simply steamed on its own. Black rice is a wholegrain rice and its delightful dark purple colour is due to natural anthocyanin which also gives blueberries and blackberries their colour.

INGREDIENTS: Black Long Grain Rice.
Cooking instructions: Hob
During cooking: Allow 75g of rice per person. Bring a large pan of water to the boil. Add salt if desired. Add rice to the pan and stir. During cooking: Return to medium heat and boil for 28-30 minutes. After cooking: Drain well and serve. Check food is piping hot. All cooking appliances vary. This is a guide only.
